Reason for participation

As a chef, I have never ceased my passion for cooking, despite the triviality of running a business. I want to let the customers taste extraordinariness with the most ordinary and the least resplendent sushi. After I learn about this challenge, I want to let people know about my insistence on sushi. Recently, Japanese cuisine in Taiwan becomes more and more resplendent, while the original taste found in traditional Japanese cuisine is gone. The culinary skill of Taiwan is not worse than that of Japan! But what about our spirit? I beg the host and the judges to give me a chance to participate in the challenge.
