The reason why I want to participate in the challenge is because I hope to exchange views with sushi chefs all over the world. I believe that the exchange of views will be very meaningful because Japanese cuisine with different styles around the world can be connected and combined, creating new ideas. The development of Japanese cuisine in Taiwan has its origin and background. Traditional Japanese skills can help answer the question of how to prepare and present local ingredients in Taiwan.
How to prepare new ingredients, bring out the flavor of them, and make dishes that more people love with traditional Japanese skills? This is my goal as a sushi chef for 10 years.
