The Global Sushi Challenge is the brainchild of the Norwegian Seafood Council and the World Sushi Skills Institute. It is the result of the longstanding relationship for seafood and sushi between Norway and Japan. The competition aims to increase global knowledge and competence in the art of sushi making, whilst showcasing Norwegian salmon as the premium choice for sushi toppings and educating chefs on the principles for handling food to be served raw.

The Global Sushi Challenge competition, UK heat, at Nobu, Old Park Lane, London

The UK heat took place at the godfather of Japanese cuisine, Nobu Old Park Lane. Nine of the UK’s finest sushi chefs, from prized restaurants such as Maze Grill Park Walk, Sake No Hana and Sushi Samba, were challenged to prepare two dishes featuring Norwegian salmon – one Edo Mae and one original, creative sushi – and were assessed on their technique in addition to their commercial appetite for producing exquisite dishes at sensible business margins. With an exception level of quality and many exquisite dishes created, the competition was tough and the panel of elite judges including Michael Booth, Hideki Maeda, Jack-Robert Møller, Hirotoshi Ogawa and Kazuo Mizuno had a tough time choosing the winner.
