In Lisbon the challenge was divided into two parts: a 2-day seminar (16 and 17 September), exclusive for sushi professionals led by the World Sushi Skills Institute and held at the School of Tourism and Lisboa Hotel and one day of competition (September 18) open to the public at the Academy Time Out Mercado da Ribeira.

12 Chefs participated in the competition which consisted of two rounds; the “Edomae Sushi Round,” which evaluates basic skills for preparing sushi, and the “Original Sushi Round,” which assesses creativity.
